After harvesting, the fruit is shelled, sorted and cleaned several times in order to remove any residue, as well as to ensure that only the fruit is preserved. This raw material is then roasted, pressed and filtered. The purée is immediately packed and flash frozen, guaranteeing the homogeneity of the dry extract and fat content, thus ensuring total consistency in the balance of recipes.
